Valley of Fire Part 1

 

We now take a trip to Las Vegas every year for our anniversary, since we honeymooned there. We have also discovered over our years together, we both enjoy getting outside to hike and explore.

Here are some of our favorite stops at Valley of Fire. We entered the park on the west side and ventured to the east for our one day adventure to the park.

Beehives

When you first enter the park from the west, you past the Beehives on your right. M.G. loved crawling all over the rocks and even found a place to relax!

Arch Rock

As you enter the park from the west, Arch Rock is located on your left near Atlatl Rock. Arch Rock was been formed by million of years of water and wind erosion.

Atlatl Rock

Atlatl is a tool used to throw a spear. Petroglyphs here show how they were used. After a short climb up the stairs, you are face to face with the petroglyphs…How cool?!?!

Meal Prepping Made Easy

 

We started exploring meal prepping about a year ago.  We were looking for options to create easy go-to lunches and dinners.  We tried meal prepping for ourselves and we tried purchasing meals from meal prep companies.

A few benefits we have found for us include:

  1. We save money. We were spending $8-10 per person just for lunch and then most nights we were tired and ended up going out to eat and that was $20-30  for both of us.
  2. We save time. Meal prepping gives us back time. We don’t have to spend part of our lunch break during the work day sitting in traffic, skipping the gym. Also after a tough day at work, dinner is ready so there are no excuses to go out to eat or eat off track.
  3. It helps us meet our healthy and fitness goals. Our workouts are planned and our meals are planned making it a no-brainer and keeps us consistent.

We decided we wanted to share our meal prepping strategy with our friends; so naturally, we hosted a meal prep social!

THE PLAN

We found four lunch or dinner recipes we liked, added one breakfast option and one snack option. Our goal was to help our friends have a few meal to take with them to experience what it is like to have a meal prepped and ready to go.

Once we had the recipes, we put all of the ingredients into a spreadsheet to make sure we bought enough of everything. Then we used the Walmart app and Sam’s Club app to create our shopping lists.

THE FOOD

Broccoli Rice Red Pepper Egg Muffin – We found this recipe on Meal Prep on Fleek. We liked this recipe because it is an easy on-the-go breakfast.  It is also under $4. It is also a low carb and low sugar recipe which will help start your day on track for success.

Carnitas Burrito Bowls – We selected this recipe from Fit Foodie Finds because it has protein, vegetables and whole grains in every bite!

Jalapeno Sliders with Sweet Potato Buns – This is another recipe from Meal Prep on Fleek.  We substitute ground turkey for ground beef. This recipe also has a slight kick and is great for an on-the-go lunch or dinner.

Quick Teriyaki Chicken Rice Bowls – This recipe, by Crunchy Creamy Sweet,  has few ingredients for an easy and fast weeknight dinner.

Sheet Pan Sausage and Vegetables – This recipe by Averie Cooks is easy, fast and yummy. There are so many variations to fit your needs and taste.

No Bake Energy Bites – This recipe, by Gimme Some Oven, is delish and quick! This recipe can also be altered to fit your nutritional needs.

How I got my confidence back

How do you feel when you walk into a room of strangers?  This is how I determine my self-confidence level.  There are a lot of factors that can determine self-confidence and I want to share with you what has worked for me, and how it can work for you!

Direction

A few years ago, I was going through the motions in a lot of areas of my life. It was though I was on autopilot, but the autopilot didn’t know where it was going… Ever feel like that, where your goals are as far out as your next paycheck?

I had the realization that I needed to make some changes in my life to be a better boyfriend, future husband and family man. I dedicated myself to work harder and developing positive habits. I focused on how to be positive and enjoy the moment, while looking ahead 6 months, 1 year, 5 years, 10 years. Allowing adjustments and redirections to be corrections not failures. I was able to go from living paycheck to paycheck to eliminating debt and improving my credit score.

Having direction gives you confidence in how you carry yourself. Confidence you will need when saying no to a night out or saying yes to being able to purchase something big you saved up for… Being able to look beyond your next paycheck relieves stress and anxiety.

You can do it, too! Don’t wait for a wake-up call like I had – my only regret is not having the drive and direction I have now, years ago. If you are circling around on autopilot, let’s chat and see if we can help you find purpose.

Health

In December of 2015, a photo showed up on my Facebook feed, that really got my attention.  I was FAT.

Yes, it doesn’t help that I am standing next to one of the skinnier friends I have, but still – I don’t think I noticed just how much I had gained. In the picture above, I weighed over 240 pounds.

In less than 8 months, I lost 50 pounds, and I have been able to keep them off. It wasn’t a fad diet or a radical change in life. I focused on smaller portions, healthy alternatives to sugar (energy drinks and sodas) and used supplements and multivitamins to fill in the gaps for complete nutrition. I feel amazing!

Below is a picture of me in November of 2016, weighing 190 pounds and still a Denver Broncos’ fan!

Since I have lost weight, I have gained confidence. I am not worried about what someone might be thinking across the room. I feel natural when presenting at work or sharing a story with friends, because I am not thinking about what I look like anymore. If you have had difficulty managing your weight, let’s chat and see if we can design a program that will help you attain your weight management goals.

Love

I am convinced that the biggest motivators in our lives aren’t ourselves, our bosses, friends, or family – rather the one that we love more than anything. When I first met Mandy, I had no clue that this beautiful woman would eventually be my number one encourager, supporter, and best friend. She is the reason I was able to look outside of myself and see the mess I was truly in…

Yes, that was cheesy. Hear me out, now that I have love in my life – my confidence is always there. I know I have a beautiful wife to go home to regardless if I have a bad day at the office, or if I lose a soccer game, she will be there. There is different kind of confidence that comes from being with someone you love. While I won’t be a match maker for you, I can promise you that if you don’t have love yet, not to give up. The right one is there for you – somewhere.

What’s next?

We want to help you gain confidence! If you struggle with confidence because of a lack of direction, worried about finances, or not as healthy as you want to be – let us know. You will perform better at work, you’ll gain confidence with relationships, and you can also be an example to others that need help. We believe in you. You can do great things. Let’s turn off the auto-pilot going nowhere and give you direction, purpose and enjoyment that confidence brings.

 

 

 

3 Pillars of a Healthy Lifestyle

We are working to intentionally focus on three pillars of a healthy lifestyle in 2018.

FOOD

Meal prepping to have a well balanced healthy meal does not have to be time consuming and is essential for us to eat better. We spend the weekends chopping veggies, cooking meat and preparing meals which can easily be frozen and heated quickly. We have also found this helps us save money too!

It is difficult to get all of the nutrients you need just from food. Some people find taking supplements help get more vitamins and minerals in their diet.

EXERCISE

Exercise can look different for everyone. It may be a walk around the office during lunch, a group fitness class or an hour lifting weights at the gym.  Most importantly, do what you love and what motivates you.

HITTING THE PAUSE BUTTON

We live in a world which glorifies “busy.” A healthy lifestyle is not about being “busy” all the time. It’s about a balance which works for you. Take time to meditate, work in your yard or even watch a movie. Consider spending time with your children or family, read a book or taking a walk. Hit the pause button and spend time with those you enjoy being around.


Hiking in a Forest in the Desert

We traveled to Las Vegas in late November to celebrate our anniversary. We love the food, the lights and the shows in Vegas. However, we love the hiking around Las Vegas even more. This year we headed to Mt. Charleston, which is about 35 miles northwest of Vegas. It is the highest mountain in Clark County, about 11,900 feet, Nevada and is located in the Humboldt-Toiyabe National Forest. I know…you’re thinking a national forest in the middle of the desert!

This area has over 50 miles of maintained trails ranging from beginner to advanced trails. We started with the Fletcher Canyon trail, which was a pretty easy out-and-back trail. It is 1.9 miles from the trail head to the end and has a slight incline, but is easy to navigate.

After lunch we headed further up the mountain to Cathedral Rock. This trail is a 2.5 mile moderate hike.

This trail twists and turns through ponderosa pines, white firs, and then aspen trees. Half way up the hike you will find a waterfall just off the trail. We heard water and then saw the waterfall and ice!!!

My husband REALLY enjoyed exploring the spring and waterfall! This hike has impressive views from the start and all the way up. We hiked quickly as we were running our of daylight!

We enjoyed both hikes at Mt. Charleston and hope to return to check out the Mt. Charleston Lodge and complete a few more hikes in the area. We may also have to check out the ski area next time.

HIKING GEAR


Before you head out to hike don’t forget your favorite hiking boots, backpacks and gear. Having waterproof hiking boots was great when we went through puddles and small streams, and don’t forget a backpack for snacks and water!

 

Turn your goals into action in 2018

As we bid adieu to 2017 and welcome 2018, we have a chance to create a life we love. This may be by new goals, new habits or new relationships.  What are some goals, resolutions or intentions you are putting into place for your best year yet?

For us, our bold goal for 2018, is to increase our business at least tenfold. That may sound extreme, but we know we can do it. We have the resources and experience to help as many people as possible!

Our Story

This story doesn’t begin in a bar, church or laundromat as so many other love stories. Rather, as we all know, true love is found on a kickball field. It was an autumn evening, the first time Mandy and M.G. met each other. Although their memories of the first meeting may differ, it did indeed happen. Luckily for M.G., there was a second chance as the kickball season was just getting started.

M.G. finally got the nerve to ask Mandy out for dinner after the 4th game of the season. Over dinner and a couple drinks, they got to know each other when sweat and dirt wasn’t on their faces. It was then, that the two realized they can laugh and share stories, be open and honest with nothing to hide, and just enjoy time together.

It wasn’t love at first sight, although the attraction was there. These seasoned veterans of the dating game knew all the plays, and they wouldn’t let the other easily win. While Mandy was visiting friends back home in Houston, she let M.G. know for the first time, that she liked him! It was as beautiful as game 7 of the World Series, or the win-by-the-nose of a Kentucky Derby and M.G. was the winner of the most prized championship of them all – love.

During three years of dating, there has been plenty of spontaneous road-trips, late night debates, or fun-filled nights out with friends. It was decided in March of 2016, that these two would take the next step and marry one another. People aren’t perfect, but Mandy and M.G. are perfect for one another.
